Equipment

Ingredients
  

  • 1 package Birrittellas Whole Wheat Dough
  • 2 tbsp Baking Soda
  • 2 cups Warm Water
  • 2 tbsp Butter (Melted)
  • 1/4 cup Parmesan Cheese
  • 1 tsp Garlic Salt
  • 1 tsp Parsley Flakes
  • 1 tsp Basil Flakes

Instructions
 

  • Preheat your oven to 450 degrees.
  • Roll out your dough into a 12”-14” log (use flour to help roll).
  • Cut into 5-6 pieces.
  • Roll out each piece into long strips. Let rest for 2 mins, then go back and stretch until about double the size.
  • Make a “U” shape then cross the two ends. Press the ends down into the dough creating your pretzel. Repeat with each and set aside.
  • Mix together your warm water and baking soda.
  • Using a mesh strainer, drop 1 pretzel at a time in the water and let it seep for 10-20 seconds.
  • Place each pretzel onto your baking sheet lined with parchment paper.
  • Brush each with your melted butter.
  • Mix together your seasoning ingredients.
  • Sprinkle seasoning onto each pretzel (leave some for when they’re done).
  • Bake for 12-15 mins. Then broil on high for an additional 2 mins.
  • Sprinkle with remaining seasoning.
  • Remove from the oven and serve warm.

Important Dough Guidelines

  1. Keep in the fridge for up to 50 days.
    ** Speed up proofing by placing the vacuum-sealed dough in a bowl of hot water. Let it sit for 20 minutes or until the center reaches room temperature. **

  2. Round the dough with flour to prevent sticking, brush with olive oil, put in a bowl, and cover.

  3. Let the dough rise for at least 3.5 hours before using.

  4. Preheat your oven to 475°F or higher, if possible.
